Ingredients (Basic Overview)
- Flour, baking powder, baking soda
- Cinnamon, ginger, nutmeg, salt
- Oil, eggs
- Brown sugar + white sugar
- Applesauce, vanilla
- Grated carrots
- Cream cheese, butter, powdered sugar (for frosting)
Instructions
Step 1: Preheat & Prep
Preheat your oven to 350°F and grease two cake pans.
Step 2: Mix Dry Ingredients
In a large bowl, mix together:
- Flour
- Baking powder & baking soda
- Spices (cinnamon, ginger, nutmeg)
- Salt
Step 3: Mix Wet Ingredients
In another bowl, combine:
- Oil
- Eggs
- Brown sugar & white sugar
- Applesauce
- Vanilla extract
Step 4: Add Carrots
Stir the grated carrots into the wet mixture.
Step 5: Combine Everything
Slowly mix the dry ingredients into the wet ingredients until just combined (don’t overmix).
Step 6: Bake
Pour the batter evenly into pans and bake for 30–35 minutes, until the cake is set.
- Beat cream cheese until smooth
- Add butter and mix
- Add powdered sugar and vanilla
- Mix until creamy
Step 8: Assemble the Cake
- Let cakes cool
- Spread frosting between layers
- Frost the top and sides
Step 9: Optional Toppings
Add nuts or decorations on top if you want.
